意粉，又稱之為意大利面，是西餐品種中最接近中國(guó)人飲食習(xí)慣，最容易被接受的。關(guān)于意粉的起源，有說是源自古羅馬，也有的說是由馬可·波羅從中國(guó)經(jīng)由西西里島傳至整個(gè)歐洲的講法。 作為意粉的法定原料，杜蘭小麥?zhǔn)亲钣操|(zhì)的小麥品種，具有高密度、高蛋白質(zhì)、高筋度等特點(diǎn)，其制成的意粉通體呈黃色，耐煮、口感好。意粉的形狀也各不不同，除了普通的直身粉外還有螺絲型的、彎管型的、蝴蝶型的、貝殼型的林林總總數(shù)百種。
